Maitake (Grifola frondosa, literally "dancing mushroom," a name derived from the joy of mushroom hunters who danced when they found this amazing and highly prized mushroom) is a parasitic polypore mushroom with a fruiting body that forms a large cluster, consisting of a stem with many fused caps. The Maitake fruiting body can reach a width of up to 100 cm. It grows at the base of trees and on stumps. Maitake is native to Asia and North America but is now widespread throughout the world and is also commercially cultivated.
Maitake is popular in cuisine for its rich, delicate flavor and very pleasant aroma, but it is even more renowned as a vital mushroom used for thousands of years in traditional Chinese medicine, while "Western cultures" only first described it in 1785 by Scottish mycologist James J. Dickson. Maitake contains a wealth of biologically active substances, from vitamins and minerals to polysaccharides, proteoglycans (D-fraction), phenols, flavonoids, and unsaturated fatty acids.
